Taco Night is a bit of an affair at our house. Especially when we have all the kids. We end up making three different kinds of taco meat. Rudy makes his taco meat the way his grandpa used to make it; mashed up with a potato masher and seasoned with taco seasoning, salt, pepper, garlic, and roasted tomatoes. Of course, my picky daughter doesn’t like it. She likes it seasoned with plain ol’ taco seasoning and not completely mashed up. (She is also the only one who wants crunchy taco shells. I guess she is slightly high-maintenance.)
And then I also like to make this paleo sweet and spicy version made with turkey and pineapple. (Traditional taco seasoning contains added sugar which is a paleo no-no.) When I’m eating strictly paleo I will eat this over a sweet potato or in a salad but I’ve also had it in taco shells or over tortilla chips. You don’t have to be on a paleo diet to enjoy this!
This recipe makes a lot and we end up eating it leftover for a couple days. It’s a good thing it’s so versatile and tasty!
Here’s how you make it:
Warm a tablespoon of coconut oil in a saucepan on medium heat and add one medium chopped onion. (You can use olive oil if you don’t have coconut oil.) After the onion has had time to get translucent, add 3 minced garlic cloves. Sauté for another 2 minutes, ensuring the garlic doesn’t burn.
Add 2.5 lbs. of ground turkey along with 1 tsp of salt and some fresh ground pepper.
Once the meat is browned, drain the grease. Add 1.5 tablespoons chili powder, 1 teaspoon cumin, a 4.5 oz. can of green chiles, 10 oz. can of diced tomatoes, and 20 oz. can of crushed pineapple, juices and all. Note: Be sure to use crushed pineapple and not pineapple chunks. In my experience, they do NOT taste the same, no matter the brand.
Let simmer for 10 minutes, stirring occasionally. Serve over a sweet potato, tortilla chips, or in a traditional taco.
