I love food. (If you couldn’t already tell.) And I love food from all different cultures. (If you stick around enough, that will become obvious as well.) I love playing around with different flavors and making new combinations. One day I was planning to make tzatziki sauce and Rudy sent me a text suggesting I make my turkey sliders for dinner. The lightbulb went off and here we are.
I always thought of my turkey burgers as having a bit of a Mexican flavor to them because I love adding green chiles to turkey meat. If you’ve ever tried to make a turkey burger without mixing anything into the meat besides spices, you know it can get rather dry. The addition of the chiles keeps the meat so moist and juicy.
And I’m sure we all think “Greek” or “gyro” when we hear “tzatziki.” So are these Greek burgers? Or is it Mexican tzatziki? Doesn’t matter. They go together and it’s heaven on a bun.
You can also make regular-sized burgers with this recipe. I chose sliders because they’re cute and you don’t feel like you’re eating as much. (Plus we had leftover King’s Hawaiian and I thought they would be the perfect bread for these!)
The tzatziki is really just an added bonus because the burgers themselves are so tasty. If there happens to be someone who doesn’t like tzatziki (gasp!) or if someone is eating paleo, just omit it (along with the bread, of course). In fact, I ate them paleo-style for lunch the next day. Yumminess. I’m pretty sure all my coworkers were jealous of my lunch as they looked down at their sad cafeteria fodder.
If you do end up going the paleo route, you can also add some shredded cucumbers and still get the crisp cuke taste without the dairy.
So start heating up your skillet because you’re not going to want to wait to make this one!
For the tzatziki:
Peel, seed, and shred one cucumber on the fine side of a box grater. Fold a paper towel in half, place the cucumber in the middle, and wrap the paper towel around it. Gently squeeze the excess water out of the cucumber. (You can use something fancy like cheesecloth but I’ve found a good quality paper towel works great.)
Add the cucumber to 1 cup greek yogurt, 1 garlic clove crushed in a garlic press, the juice of 1/2 a lemon, 1 teaspoon dill (you can add another 1/2 teaspoon if you really like dill), a nice pinch of salt, and some fresh ground pepper. Mix well then drizzle in a tablespoon of olive oil and stir again. Let chill for about an hour before serving.
For the burgers:
Mix the following ingredients in a big bowl with your hands:
2 lbs. ground turkey
One 4.5 oz. can chopped green chiles
1 teaspoon salt
1/2 teaspoon cumin
1/2 teaspoon chili powder
fresh ground pepper
Make 12 small patties. Put them in a skillet on medium heat (3 at a time) and cook 3-4 minutes on each side. (Turkey does not take as long to cook as ground hamburger.)
Assemble the burgers by placing them inside a sliced King’s Hawaiian roll and topping with butter lettuce, a dollop of tzatziki sauce, red onion, and grape tomato halves.

- 1 cucumber peeled, seeded, and shredded on fine grate of box grater
- 1 cup greek yogurt
- 1 garlic clove crushed in garlic press
- 1/2 lemon, juiced
- 1-1.5 teaspoon dill
- 1 pinch of salt
- fresh ground pepper
- 1 tablespoon olive oil
Use a paper towel to gently squeeze out the excess water from the shredded cucumber.
Add the cucumber to all other ingredients except the olive oil. Stir well.
Slowly drizzle in the olive oil and stir again.
Chill for an hour before serving.
Green Chile Turkey Sliders
For the sliders
- 2 lbs. ground turkey
- 4.5 oz. chopped green chiles
- 1 teaspoon salt
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- fresh ground pepper to taste
- 12 King's Hawaiian rolls
- 1 dollop tzatziki sauce
- butter lettuce
- red onion diced
- grape tomatoes halved
Heat skillet to medium heat.
Combine all the slider ingredients with your hands in a bowl.
Make 12 patties.
Cook burgers, 3 at a time, in the skillet. About 3-4 minutes on each side.
Slice rolls and build burgers. Top with tzatziki sauce, butter lettuce, diced red onion, and grape tomatoes.
