During the first part of the 3 1/2 hour trip, Sully was NOT happy to be back in the car seat. (Can you blame him? He’s 2.) So after he fell asleep in the car, we didn’t stop even though we were #1: starving and #2: needing to pee. The things we do for our kids…
Our trip to Texas was originally put into motion because my brother-in-law Jerry (affectionately known as J.J.) decided to have a surprise 50th birthday party for his wife Amber. (She looks more around 39 if you ask me.)
After we got to the hotel and checked in (and had used the bathroom with much relief) it was time to shower and leave. No time for food. By this time, I was so sick of eating what I call “Travel Food.” I looked in disgust at all the snacks that had traveled around with us for 1200+ miles. Even though my body was craving protein, the very last thing I wanted to do was snap into a Slim Jim.
The party was on a party boat on Lake Austin. While a little bit chilly, it was beautiful! And oh, did I mention they had Rudy’s BBQ cater. I heard my muscles whisper in desperation, “protein!!!!” I scarfed mine down so fast I didn’t even think to take a picture. But trust me it was goooooooood.
While I didn’t gamble, a lot of people did (even though there was no real money involved, it was just for fun).
And of course, there was cake…
The next day we met the fam at Chuy’s for lunch before heading back to Florida. I should’ve counted, but I think we had around 25 people at the table. It was so nice to see everyone (and meet a few family members I hadn’t before).
We got on the road around 3pm and drove 9 hours to Biloxi, Mississippi before stopping for the night. Sully had slept a good chunk of the way so he was wide awake once we got there. I gave him a bath and we snuggled and fell asleep. I don’t even remember eating dinner, we were so tired.
The next day we still had 6 1/2 hours to drive. This is something we missed from Texas:
During the drive home I read this book (*affiliate link) because I received a notification that it was part of a one-day Kindle sale and it was on my Goodreads “To Read” list. (Feel free to friend me on Goodreads!) If you’re looking for a book to read, I would recommend it. Sometimes I can figure out what is going to happen but this one was actually a surprise. I recently discovered that it was made into a movie starring Nicole Kidman and Colin Firth in 2014. Part of me wants to watch it, but in my opinion there are very few movies adapted from amazing books that are worth watching (e.g., Harry Potter, Green Mile, Kite Runner).
It was a great feeling to finally get home. Wash the road off of us. Unpack. Do laundry. But my body was still angry. It needed some major detox! I whipped up this Paleo Detox Salad and it totally hit the spot. A few things to note:

- I steamed the asparagus tips in this steamer with 2 tablespoons of water for 3 minutes.
- You do not need a lot of balsamic vinegar. A little goes a long way and it really brings out the flavors of the veggies!

Paleo Detox Salad
- 4 cups organic spring mix
- 1 cup paleo turkey taco meat
- 1 sweet potato peeled and cubed
- 2 teaspoons coconut oil
- salt and pepper to taste
- 6-8 asparagus tips
- 2 tablespoons water for steaming asparagus
- 1/2 yellow bell pepper cut into strips
- 6 grape tomatoes halved
- 6-8 green or black olives
- tablespoon Renfro's jalapeño salsa
- 1 teaspoon balsamic vinegar a little goes a long way!
Preheat the oven to 350ºF.
Toss the sweet potato cubes in coconut oil, salt, and pepper and spread out on a cookie sheet. Put the cookie sheet into the oven for 15 minutes, stir sweet potatoes around, then return to the oven for 10 minutes.
Use steamer to steam asparagus tips in water for 3 minutes.
Assemble salad and drizzle Renfro's and balsamic vinegar on top. Enjoy!
